Prune Cake Recipe

Ingredients

  • 2 c. sugar
  • 3 eggs, beaten
  • 1 c. cooking oil
  • 2 tsp. nutmeg
  • 2 tsp. allspice
  • 2 tsp. cinnamon
  • 1-1/2 tsp. cloves
  • 1-1/2 tsp. salt
  • 2 tsp. soda
  • 1 c. buttermilk
  • 1-1/2 c. chopped pecans
  • 1 c. cooked prunes, pitted and drained
  • 1-1/2 c. flour

Directions

  1. Preheat Oven to 325° F.
  2. Cream sugar and oil. Add eggs.
  3. Sift together flour, soda and spices.
  4. Dissolve soda in buttermilk.
  5. Beat egg mixture, adding dry ingredients alternately with buttermilk/soda.
  6. Add nuts and prunes and mix well.
  7. Pour batter into greased and floured bundt pan.
  8. Bake at 325° for 1 hour or until toothpick stuck in middle comes out clean.
