Cake Ingredients

(Tastes better as it ages)

  • 2 c. flour
  • 2 c. sugar
  • 2 tsp. baking soda
  • Dash of salt
  • 2 eggs
  • 2 c. (20-oz. can) crushed pineapple, undrained

Cake Directions

  1. Preheat Oven to 350° F.
  2. Sift together and mix first 4 ingredients.
  3. Add last 2 ingredients and mix well.
  4. Pour batter into a 9 x 13-inch baking pan.
  5. Bake for 30 minutes at 350° until cake pulls away from side.
  6. Cool before icing.

Icing:

Icing Ingredients

  • 1 c. sugar
  • 1 c. evaporated milk
  • 1 stick margarine
  • 1 can (1-1/4 c.) Angel Flake coconut
  • 1/2 tsp. vanilla
  • 1 c. chopped pecans

Icing Directions

  1. Mix first 3 ingredients together and bring to a boil, stirring constantly.
  2. Boil 3 to 4 minutes longer (be sure to time!).
  3. Add coconut, vanilla and nuts.
  4. Pour over cake and cover.
  5. Hide it covered for four days.
